Sourdough Carrot Cinnamon Rolls
Pillowy sourdough rolls with freshly grated carrots, swirled with pumpkin-spiced brown sugar filling and crowned with cinnamon cream cheese frosting.

Ingredients
The Dough
Wet Ingredients
- 1/2 cup sourdough starter
- 1/2 cup water
- 1/2 cup honey
- 2 eggs
- 1/2 cup melted coconut oil
Dry / Add-Ins
- 4 cups flour
- 2 cups freshly grated carrots
After the 12-Hour Rise
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
Cinnamon Filling
- 1 cup brown sugar
- 1 stick unsalted butter, softened
- 1 tbsp cinnamon powder
- 1 tbsp pumpkin spice
Cream Cheese Frosting
- 1/2 stick unsalted butter, softened
- 1/2 block cream cheese, room temperature
- 1 cup powdered sugar
- 1 tsp vanilla
- 1 tsp cinnamon
Method
Making the Dough
- Mix all the wet ingredients together until well combined.
- Add the flour and freshly grated carrots. Knead into a smooth dough.
- Form the dough into a big ball. Oil a bowl, place the dough inside, and cover it. Make sure there is enough room for the dough to rise — it should at least double in size and be pillowy soft.
- Let rise for 12 hours.
- After 12 hours, add the following and knead into the dough: 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
Assembly & Baking
- Roll the dough out thin into a rectangular shape on a floured surface.
- Spread the filling evenly over the surface of the dough.
- Roll the dough up tightly into a log, then cut into individual rolls.
- Place rolls in a greased baking pan. Bake in a preheated oven at 375°F for 25 minutes.
