  • 1/2 cup sourdough starter (125 ml)
  • 3 1/2 cups bread flour (250 ml cups)
  • 1 tsp salt

Part 1

Mix & Rise
  1. Mix the water and sourdough starter until the starter is dissolved.
  2. Add the bread flour and salt. Mix until no dry flour remains, scraping down the sides of the bowl as needed. The dough should look shaggy.
  3. Cover and let the dough rest for 30 minutes.
  4. Do the first set of stretch and folds, using four folds around the dough. Cover again.
  5. Rest for another 30 minutes, then do a second set of stretch and folds.
  6. Cover and keep the dough in a warm place until doubled in size, about 3 to 4 hours.

Shaping

Makes 6
  1. Dust the work surface with bread flour and turn the dough out onto it.
  2. Stretch the dough out slightly, then divide it into 6 pieces.
  3. Shape each piece by folding one side toward the center, overlapping the other side, then rolling it like a small loaf.
  4. Form each roll into an oval.
  5. Dust a baking tray with white rice flour and place the shaped rolls on the tray.
  6. Cover with a tea towel and rest for 15 minutes while the oven preheats.

Baking

Covered Bake
  1. Preheat the oven to 425°F.
  2. Lightly dust the tops of the rolls with white rice flour.
  3. Score each roll down the middle with a lame or sharp knife.
  4. Cover the rolls with an inverted 18 by 13 inch tray.
  5. Bake covered for 25 minutes.
  6. Remove the top tray and bake for another 15 minutes.
  7. Let the rolls cool completely before cutting.
