  • 1 cup milk, any kind
  • 1/2 cup sourdough starter, active or discard
  • 1 1/4 cups bread flour or all-purpose flour

  • 1/2 tsp salt
  • 2 Tbsp granulated sugar
  • 1 tsp baking soda

Part 1

Make the Batter

  1. In a large bowl, mix the milk and sourdough starter until well combined.
  2. Add the flour and mix thoroughly.
  3. Cover and let the batter rest for 20 to 30 minutes. This softens any flour lumps and helps create a smoother batter.
    Set a check timer
    Choose when to check; the step's visual cues decide when it is ready.
  4. Add the oil, egg, salt, sugar, and baking soda to the rested batter.
  5. Mix until evenly combined and the egg is completely blended in. The consistency may be thicker or thinner depending on the starter.
  6. Preheat the waffle iron and lightly coat it with cooking spray or oil.
  7. Cook for about 1 1/2 minutes, or until cooked through and easy to release. Allow more time for a thicker iron.
  8. Preheat a skillet or griddle and lightly grease the cooking surface.
