Sourdough Banana Bread

Ingredients
Dry Ingredients
- 2 cups bread flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
Wet Ingredients
- 1 cup brown sugar
- 1 stick unsalted butter, melted
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sourdough starter (active or discard)
- 3 smashed bananas
Optional
- Pecans
Method
Instructions
- Mix all the dry ingredients together really well. Set aside.
- In a separate bowl, mix the brown sugar, melted butter, and eggs well.
- Add the vanilla and sourdough starter. Mix well.
- Add the smashed bananas and mix.
- Combine with the dry ingredients and mix until just combined.
- Add some pecans if you want.
- Mix really well and pour into an oiled loaf pan.
Baking
- Preheat oven to 350°F.
- Bake in a loaf pan for 45 minutes.
- If you use a muffin pan, it will take about 20 to 25 minutes.
- Eat the bread while it's still warm.
