Fill the Pan

Prep
  1. Preheat the oven to 425°F. Lightly coat 8 wells of a 12-cup metal muffin pan with cooking spray.
  2. Spoon 3 Tbsp sourdough starter or discard into each prepared cup.
  3. Add about 2 tsp pizza sauce to each cup, using a little more if you prefer.
  4. Top each cup with a small handful of mozzarella, then sprinkle with diced pepperoni.

Part 2

Bake & Finish

  1. Bake for 8 minutes.
  2. Switch the oven to broil and cook for about 2 minutes, watching continuously, until the cheese is melted and lightly browned.
  3. Rest in the pan for 2 to 3 minutes. Loosen the edges, carefully lift out the bites, and serve warm.
