The Dough

Wet Ingredients

  • 1/2 cup sourdough starter
  • 1/2 cup water
  • 1/2 cup honey
  • 2 eggs
  • 1/2 cup melted coconut oil

After the 12-Hour Rise

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Cinnamon Filling

  • 1 cup brown sugar
  • 1 stick unsalted butter, softened
  • 1 tbsp cinnamon powder
  • 1 tbsp pumpkin spice

Cream Cheese Frosting

  • 1/2 stick unsalted butter, softened
  • 1/2 block cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon

Method

Step by step

Part 1

Making the Dough

  1. Mix all the wet ingredients together until well combined. Use: 1/2 cup sourdough starter1/2 cup water1/2 cup honey2 eggs1/2 cup melted coconut oil
  2. Add the flour and freshly grated carrots. Knead into a smooth dough.
  3. Form the dough into a big ball. Oil a bowl, place the dough inside, and cover it. Make sure there is enough room for the dough to rise — it should at least double in size and be pillowy soft.
  4. Let rise for 12 hours.
  5. After 12 hours, add the following and knead into the dough: 1 tsp baking soda
  6. 1 tsp baking powder
  7. 1/2 tsp salt

Part 2

Assembly & Baking

  1. Roll the dough out thin into a rectangular shape on a floured surface.
  2. Spread the filling evenly over the surface of the dough.
  3. Roll the dough up tightly into a log, then cut into individual rolls.
  4. Place rolls in a greased baking pan. Bake in a preheated oven at 375°F for 25 minutes.
