Sourdough Chocolate Chip Cookies
Rich, chewy cookies built on nutty brown butter and a cold spoonful of sourdough starter — chilled to deepen the flavor, then baked to golden, crackly perfection.

Dry Ingredients
- 1 3/4 cups all-purpose flour (or bread flour)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- ~1/2 tsp salt (a little less)
Wet Ingredients
- 1/2 cup regular sugar
- 1/2 cup brown sugar
- 1/2 cup brown butter
- 1 egg yolk
- 1 tsp vanilla (or a little more)
- 1/3 cup cold sourdough starter (unfed)
Mix-ins
- 1 cup chocolate chips
Method
Instructions
- Brown the butter: Put the butter on the stove and let it heat until it gets golden. Pull it off and let it cool for a little bit.
- Mix the dry ingredients together and set them to the side.
- In another bowl, combine the regular sugar and brown sugar. Give the cooled brown butter a mix, then add it to the sugars.
- Add 1 egg yolk and 1 tsp vanilla (or a little more).
- Add 1/3 cup of cold, unfed sourdough starter and mix that up really well.
- Add the wet ingredients into the dry ingredients. Once the two are combined, mix them really well.
- Mix in 1 cup chocolate chips with your hands, giving the dough a little mix.
- Scoop the dough onto a parchment-lined baking sheet, then freeze.
Baking
- Preheat the oven to 350°F.
- Bake the cookies for about 8 to 10 minutes.
