- 2 tsp pumpkin spice
- 2 tsp baking soda
- 1/4 tsp salt

- 1 1/2 cups sugar
- 1 1/3 cups olive oil
- 3 eggs, room temperature
- 1 tsp vanilla
- 1/2 cup sourdough starter
- 3 cups grated raw carrots

- Preheat oven to 350°F. Line a muffin tin with paper liners or grease well.
- Mix all the wet ingredients together — sugar, olive oil, eggs, vanilla, sourdough starter, and grated carrots — until well combined.
- Add the dry ingredients (flour, pumpkin spice, baking soda, and salt) and mix to combine.
- Fill muffin cups about 3/4 full. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
